The preparation is gained from the metabolism of Penicillium. It can hydrolyzeB-glucan into oligosaccharide and glucose. B-glucanase is a safe enzyme preparation for food, which is measured up by related internal and international standard.
ACTIVITY of ENZYME:
One activity of (u/ml) of B-glucanase is defined as that quantity of enzyme that can liberate 1ug glucose in one minute at pH of 5.0, at the temperature of 50.
B-glucanase > 3300000 u/ml
In the process of hydrolysis, the produce of glucose and disaccharide will inhibit the process of reaction.
